Directions:
Mix water, yeast, salt and then add flour. Let sit on counter for 2hrs+. This will keep in the fridge for a couple weeks. Fold over each day.
Take out 1/4 to 1/3 and form into a loaf. Let rise on counter for 45 minutes. While rising, preheat oven, metal bowl, and baking stone to 450 degrees. Put loaf on stone, put 1 cup water in metal bowl and bake 30 minutes. Cool enough to cut.
