1/2 cup butter
1 cup sugar
2 eggs
2 cups sifted cake flour
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla
3/4 cup milk
1-2 sticks butter cinnamon sugar
Cream the butter very well, add the sugar gradually and cream until the mixture is fluffy. If using a mixer, add both eggs at once, blend in the flour, powder and salt at low speed, then the milk and vanilla. When well blended, and be sure to scrape the sides and bottom of bowl while mixing, put in greased and floured muffin pans.
Bake at 350 for 10 to 20 minutes.
Melt 1-2 sticks of butter. Roll hot muffins in butter and coat with cinnamon sugar.
