Janet Irish's Gingerbread

This is a very traditional New England dessert.

Grease and flour 9x9 square pan (or 9" round).
Preheat oven to 325F

Mix:

  • 1/2 cup shortening or softened butter
  • 2 Tbsp sugar
  • 1 egg

    Blend in (be careful of spattering, HOT)

  • 1 cup dark molasses
  • 1 cup boiling water
    (I use the boiling water to get rinse out as much of the molasses out of the cup as possible)

    Measure into a sifter:

  • 2 1/4 cup flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ginger
  • 1 tsp cinnamon

    Sift dry ingredients into blended stuff, beat all together until smooth. Pour into pan and bake 45 - 50 minutes. Serve warm with whipped cream.
